Ingredients
- 1 can of callaloo
- Okra, chopped
- Ginger, a ½ thumb (1.5 tbsp), diced
- 1 small yellow onion, chopped
- 1 red bell pepper, sliced
- Pinch of salt
- Pinch of black pepper
- 1 tbsp vegetable oil (or the oil of your choice)
- 1 small tomato, sliced
- ½ cup carrots, thinly sliced
- 2 teaspoon paprika

Directions
- In a saucepan heat oil until shimmering. Add the chopped onion and saute until golden brown, about 5 minutes.
- Add in the okra, carrots and sliced red bell pepper. Saute for 10 minutes.
- Add in callaloo and tomato; saute for another 5 minutes.
